4 apricots, ½ cup (120ml) cashew milk, 1 tbsp coconut flakes, 1 tbsp honey, a handful ice cubes.


Mix all ingredients and blend for a few minutes, until smooth.Top it with some more coconut flakes.


Ingredients :

For the coconut crumble : 2 cups flour, ¾ cup sugar, 1 tsp baking powder, 2 cups dried coconut, , medium cut, pinch salt, 1 cup butter, cut in small pieces.

For the apricot filling : 3 cups chopped dried apricots, 1 cup sugar, 1½ cups boiling water.

Instructions : Sift together the flour, sugar, baking powder, coconut and salt. Using your hands or a pastry blender cut the butter into the dry ingredients until the it is completely incorporated and the mixture resembles a coarse crumbly meal. Press half of the crumb mixture into the bottom of a 9 x 13 inch well greased baking pan. Pour and spread the apricot filling evenly over the bottom crumbs.



8 cups pitted and chopped apricots, 1/2 cup fresh lemon juice, 5 1/2 cups sugar.

INSTRUCTIONS : Place apricots, lemon juice and sugar in a large pot.

Turn over medium high heat. Stir often at the beginning until the mixture becomes really liquidy. Continue cooking until mixture comes to a rapid boilContinue boiling for approximately 25 minutes. Cook until jam reaches 220 Degrees F .Transfer hot jam into sterilized jam jars (half pint size). Wipe top of jar clean. Add canning lid and ring. Process in a boiling water bath for 10 minutes.
